Clearly the best of both worlds! The Water of Life becomes a tasty palate cleanser and dessert treat! This recipe comes from Andreas Viestad (the Scandinavian God of Cooking).
1 cup superfine sugar
2 tablespoons finely grated lemon zest
2 1/2 cups water
1/4 cup fresh lemon juice
2/3 cup Aquavit
In a small saucepan, combine the sugar, lemon zest, and water and bring to a boil over high heat. Boil over medium heat for 5 minutes. Add the lemon juice and set aside to cool.
Strain the syrup into a bowl. Add the aquavit and place the bowl in the freezer. Take out and stir energetically with a fork every 30 minutes until completely frozen. (This is important so the texture is correct).
If the sorbet is frozen hard, let it soften briefly in the refrigerator before serving.
