Aquavit Recipes! (It is the Water of Life, you know!)

Christer Larsson’s Spiced Aquavit

1 navel orange

2 teaspoons fennel seeds

1 teaspoon caraway seeds

3 whole star anise*

a 1-liter bottle Absolut vodka

 

Wash and dry orange. Beginning at 1 end, with a vegetable peeler carefully remove a long strip of zest in a spiral from half of orange and add with spices to bottle of vodka. Let vodka stand at room temperature 3 days. Freeze aquavit in bottle at least 8 hours, or until ice-cold, and up to 3 days.

Homemade Aquavit

Ingredients

3 tablespoons whole coriander seeds
2 tablespoons fennel seeds
1 tablespoon caraway seed
1 tablespoon dill seed
1 liter vodka
6 whole black peppercorns
2 whole cloves

Directions

With a mortar and pestle, lightly crush the coriander, fennel, caraway, and dill seeds.

In a large, airtight glass container, combine the vodka with the crushed spices, peppercorns, and cloves. Cover and let stand at room temperature for 2 weeks, gently shaking the jar every 2 or 3 days. Strain the vodka into 4 clean 8-ounce glass bottles. Discard the spices.

Makes 4 bottles.

Fig and Cardamom

Toast ¼ cup cardamom pods and combine with 750 ml potato vodka, leaving to infuse for one week. Wash and halve ½ cup dried black mission figs and add to the infusion for four to five days more. Strain and store.

Horseradish

Peel, wash and coarsely chop a horseradish root. Combine ¼ cup chopped horseradish with 750 ml potato vodka. Leave to infuse for one to two weeks. Strain and store.

Aquavit

Rinds from:

1 orange

1 lemon

1 lime

1 teaspoon fennel seeds

1 teaspoon caraway seeds

1 bottle vodka (Absolut)

 

 

Here is the crowd favorite – created by Scandinavian magician Andreas Viestad!

Andreas Viestad’s Mock Aquavit

2 teaspoons caraway seeds 1 teaspoon fennel seed
2 teaspoons dill seeds 2 star anise
1 tablespoon coriander seed 1 whole clove
1 cinnamon stick, 1-inch long (optional) 2 teaspoons cumin seeds (optional)
1 liter potato vodka A little marsala wine –optional after you have aged the original mixture

Directions:

1    Open the vodka bottle, add all the remaining ingredients (Note: I usually warm all the spices in a dry frying pan until they begin to release their essence), and cover tightly.

2    Let stand in a cool, dark place for 2 to 3 weeks, shaking every 3 or 4 days –  (I shake once a day) how long you let it sit depends on how strong you want it, so taste it after 2 weeks to see if you want to let it go longer.  (NOTE – I generally have found most people like the Aquavit better after about 12 days.  I have kept it up to 3 weeks – it becomes more like Underberg or another aperitif or digestive).

3    When it’s as strong as you’d like, strain the solids through a sieve and discard them, then transfer t

he aquavit back into the bottle.  If it becomes too strong, you can dilute it with a little plain Absolut or other vodka.

4. You can add a little Orange rind or Lemon rind.  A little goes a long way

5.    To serve: place your aquavit in the freezer until chilled and you can also place your 1 ounce tall glasses in the refrigerator until chilled – then serve.
